HERBED SWEET POTATO FRIES
Not only are sweet potatoes delicious, they're also sustainable!
What you’ll need
- 4-5 sweet potatoes
- 2 tbsp olive oil
- 1 tbsp parsley, minced
- 2 tsp rosemary, minced
- 1 tsp sage, minced
- ½ lemon, juiced
- Salt to taste
How to put it together
- Make the seasoning mixture by combining the oil, parsley, rosemary, sage, and a pinch of salt, set aside
- Preheat oven to 400ºF
- Wash and skin sweet potatoes
- Cut the potatoes in planks and further into sticks
- In a bowl combine the potato sticks and the oil mixture
- Place on a pan in an even layer and cook for 30-35 minutes flipping halfway between
- Remove from oven and add lemon juice and salt to taste
